Signal has several cafes now, with two on Alameda Island and one in Berkeley, CA.  In our conversation, Brendan helps us understand how beans are chosen, the overall process of roasting, and how recent advances in analytics help you get your favorite beans the same way each time. We also discuss new varietals of beans that are out there that Brendan is looking forward to sampling.  Overall, it is a primer for exploring fantastic coffee from one of the finest cafes and coffee suppliers in the country.
